Why Gluten Free?

Gluten is a naturally occurring “glue-like” protein, found in wheat, barley, rye, and triticale. All forms of wheat contain gluten, including durum, spelt, and farro.

The ingestion of gluten can be life-threatening to people with celiac disease, causing an adverse reaction which damages intestinal cells and can lead to serious health problems. Following a life-long, strict gluten-free diet is the only way to avoid the symptoms of this intolerance.

Celiac disease is a global public health concern. It is estimated that the world prevalence of this condition is 1.4% based on serologic findings (Singh P. et al., 2018).

A non-chronic form of this disease is the non-celiac gluten sensitivity, also known as gluten sensitivity, condition that can be only temporary or long-term. Symptoms such as flatulence, fatigue, headache, muscle pain or diarrhea can be caused by them. These adverse manifestations can be relieved by consistently avoiding the intake of gluten-containing foods. However, if you think you may have a gluten-related disorder a visit to the doctor is essential to make an accurate diagnosis, before removing gluten from your diet.

Many people nowadays voluntarily exclude gluten-containing foods from the diet or significantly reduce the intake of these. People and athletes who are not affected by celiac disease nor gluten sensibility are increasingly consuming gluten-free foods.
